Broccoli Bacon Salad

This is a Keto Approved recipe that you can make in 15 minutes and requires absolutely no cooking. (besides the bacon.) It makes a great side dish or can be used as a lunch meal all by itself. Try it out and leave some feedback.
Servings 10 ppl (as a side)
Ingredients:
8 cups of chopped broccoli
6 ounces cheddar cut into cubes
1/4 c yellow or red onion (red onion will be more mild, yellow will have more of a kick)
1/4 c thinly sliced almonds or cashews
8 slices of cooked bacon (crumbled)
1/2 Apple cut into very small cubes (optional) My favorite are Pink Ladies, they seem to be the most crisp and flavorful apples.
1/4 c sour cream
2 TBLS ranch seasoning mix
1 tsp white wine vinegar
1/2 c mayo (I like to make my own or mayo made with Avocado oil)
Homemade mayonnaise:
2 large omega-3 eggs, yolks only
1 TBLS lemon jucie
1 TBLS white wine vinegar
1/4 tsp Dijon mustard
Pinch of sea salt
Pinch of black pepper
3/4 c avocado oil or extra virgin olive oil.
Directions for homemade mayonnaise: Place egg whites, lemon juice, vinegar, mustard, salt, and pepper in a medium bowl. Using a wire whisk, whisk until smooth and ingredients are incorporated. Then slowly whisk in the oil a few drops at a time, until the mayo begins to thicken and come together. If you add the oil too quickly the mixture will not thicken. Whisk vigorously to make an emulsion and to get in a good arm workout. :)
Directions for salad: Add the broccoli, cheddar, nuts, and bacon and apples (if using) to a large owl and stir to combine.
Add the mayo, sour cream, ranch seasoning and vinegar into a small bowl and stir well.
Pour the dressing over the salad and stir well to coat.
Voila lunch is served!
